About Clarofino ancient grains
Ancient grains are not returning because they are new. They are returning because our priorities have changed. Traditional varieties were once replaced by modern wheat designed for larger harvests, easier farming, longer storage and predictable industrial results. Today, farmers and artisan bakers are rediscovering what was left behind: distinctive flavour, regional character and valuable agricultural diversity. Now it is growing again and being traditionally stone milled into this naturally golden flour.
It is not a story of old wheat being better in every way. Modern wheat solved real problems, especially food supply and affordability. But Clarofino offers something modern agriculture did not prioritise: character.
